Cacao nibs are obtained from the seeds of the cacao plant, Theobroma cacao, native to the rainforests of South America and the main ingredient of chocolate. The nibs are raw pieces of the pure inner seed, obtained through a process of toasting and grinding, and do not contain any added ingredients.

They have a pleasant deep chocolate flavor that is slightly bitter and nutty, and are rich in antioxidants, vitamins, minerals (such as magnesium, potassium, selenium, zinc, copper, and iron), and fiber. Cacao nibs are also sugar-free, low calorie, and low fat.

Theobromine, found in cacao, stimulates a slow release of energy and may promote cardiovascular health. Additionally, cacao contains anandamide, a neurotransmitter that can elevate mood by blocking feelings of pain and depression. Phenylethylamine, a chemical found in the brain when people are in love, is also present in cacao nibs.

Our "San Martin" cacao is a mixture of native varieties and Criollo with a little bit of Trinitario, and the beans come mostly from the Sisa, Saposoa, and Huicungo areas.
